Patsy Gosling’s Barbequed Lemon Prawns & Melon

INGREDIENTS

  • ¼ of a firm ripe Rockmelon
  • 12 medium raw Prawns
  • 1 tblspn Lemon Juice
  • 1 tblspn melted Butter
  • 1 small clove Garlic, chopped

METHOD Deseed and slice the Rockmelon into thin wedges, then chill. Peel and devein the prawns leaving the tails intact. Place the prawns in a bowl. Combine the lemon juice, melted butter and garlic and pour over the prawns. Cover and leave the prawns to marinate for half an hour. When ready to eat, heat a barbecue plate or frying pan and cook the prawns for just a few minutes, turning once. Serve the prawns with a few chilled Rockmelon wedges. Serves 2
