Garlic and Ginger Prawns in a Wok

INGREDIENTS

  • ½ kilo medium Green Prawns
  • 2 tblspns cut in strips Ginger
  • 2 tblspns cut in strips Shallots
  • 2 cloves cut in strips Garlic
  • 2 tblspns Peanut Oil
  • 2 tblspns Dark Soy Sauce

METHOD Peel and clean the prawns. Sit the wok on the heat. Place in the peanut oil. When hot add the garlic, shallots and ginger. Stir and Bruise, so as to release the flavours. Now add the prawns and mix altogether. Stir until prawns are cooked which should only take 3-4 minutes. Splash on the Soy Sauce. The secret of this dish is not to over-cook the prawns or they will go chewy. This recipe is simple and you will find it delicious. Serves 2
