Salmon & Potato Bake

INGREDIENTS

  • 1 kg tiny New Potatoes
  • 415g can Pink Salmon, drained
  • 4 Green Onions, chopped finely
  • 1 tspn finely grated Lemon Rind
  • 300 ml Cream
  • 1 cup Pizza Cheese

METHOD Boil, steam or microwave potatoes until tender, cool slightly; slice thinly. Preheat oven to moderate hot. Layer half of the potato slices into a 2 litre oiled shallow ovenproof dish, top with combined salmon, onion and rind, then remaining potato slices. Pour over cream; sprinkle with  cheese. Bake uncovered, in moderately hot oven about 30 minutes or until browned lightly and heated through. Serves 4
